Abstract

PEREZ, Juan Fernando  and  RIANO, Germán. Queuing Analysis for the Design of a Cafeteria Using Discrete-Event Simulation. rev.ing. [online]. 2007, n.25, pp.12-21. ISSN 0121-4993.

In this paper we describe the application of discrete event simulation for analyzing queues in a school restaurant. From these results we determine quantitative requirements for restaurant design including the randomness of each process and their interaction. Furthermore the use of graphic tools allowed a fruitful interaction with the team in charge of the architectural design. We show the model construction process, the diverse scenarios analyzed, and the selected configuration, which shows strong advantages against the current design.

Keywords : Service systems; stochastic modeling; discrete-event simulation.
